Paint the grass green.

This shows what happens if the chocolate is too thick when painting. This
is not as important on the second coat like this close up shows.

All the color areas are in place now and have been given two or more coats.
Hold the mold up to a light and check for thin spots.
Make sure the edge of each color is built up as thick as possible - at least 1/8 inch thick around the edge of the mold cavity.

Use a pastry brush to apply a thin coat of dark chocolate to the entire mold
cavity using care around the colored areas. Allow to cool.

Build up several heavy coats of dark chocolate allowing it to cool between
coats. Make sure you have a nice thick edge all the way around the perimeter.
Since this mold is a bit top heavy, I spooned several ounces of melted chocolate into the base to make it more stable.

Place in a freezer just long enough to separate from
the mold easily. Allow them to return to room temperature before continuing.
Stage one is now complete.

Stage two involves cleaning up the edges and attaching
them together.
Place a baking sheet atop a pot of boiling water. Melt one turkey half level against the baking sheet.
Note: Wearing cotton gloves will reduce the chance of blemishes during handling.

Repeat step 17 for the other half and immediately press it against the first
half to bond them together.
Note: By placing the fist half back in the mold first it makes the assembly more stable and reduces the amount of hand contact with the chocolate.
