Santa Sleigh Centerpiece
Chocolate Project

This fun Christmas project looks great as a centerpiece for Christmas dinner. Although it is large and looks complex, the components are made in smaller, simple sub assemblies then combined into one large centerpiece.

The sleigh centerpiece shown here is just one possible variation and many other components may be added, such as Santa. The molds listed are the ones I used, but you may prefer to use different molds.

PLEASE NOTE!! - Although chocolate making is relatively safe for the entire family to participate, adult supervision is required.

Chocolate
I prefer to use chocolate wafers designed for home molding chocolate. My preferred brand is Merckens which works well with all chocolate molding projects, is available in a wide selection of colors, and tastes great.

Melting Chocolate
Either melting method may be used.

Double Boiler - See Double Boiler Usage Instructions.

A microwave may also be used but care must be taken not to overheat the chocolate.

  1. Place the chocolate in a microwave safe bowl.
  2. Heat for 30 seconds.
  3. Remove and stir.
  4. Repeat steps 2 and 3 until the chocolate is creamy.
  5. Optimum pouring temperature is about 90 degrees F. Note: Pouring chocolate molds hotter than 160 degrees F. will destroy the mold. Do not place the thermometer in the microwave!

Chocolate Making Supplies And Materials

Sleigh Chocolate Mold One needed.
Reindeer Chocolate Mold One needed.
Stacking Tree Chocolate Mold One needed.
Tree Assembly Chocolate Mold One needed. This mold is used only for the gifts and any suitably sized square or rectangle mold may be used.
Snowman Lolly Chocolate Mold One needed.
Chocolate Coating Milk, dark, green, red, and white chocolate was used here.
Candy Canes Edible Confetti One jar will be enough for many trees.
Rainbow Non-Pareils One jar will make many trees.
Small Eyes, Assorted One package will make a lot of these.
Pastry Brush One needed.
Paint Brush One needed for each painted color.
Squeeze Bottle One needed.
Thermometer One.
Double Boiler For melting chocolate.
Cake Board One.
Royal Icing One. Depending on the thickness you apply it, more than one package may be needed.
Wrapping Foil One or more Christmas colors

 

Step By Step Instructions

1. Start with the sleigh and snowman molds which are used with no modifications. 2. Melt some red chocolate and paint the candy cane and the berries on the sleigh. Colored coatings have a tendency to be thicker and adding a bit of Paramount Crystals when melting them makes them easier to paint.
3. Paint the holly leaves on the sleigh with green chocolate. 4. Paint the snowman's scarf green, then paint his hat and nose with dark chocolate. Allow all painting to harden before continuing.
5. Use a squeeze bottle and white chocolate to paint the sleigh's trim. 6. Fill the snowman with white chocolate.
7. Fill the sleigh with dark chocolate. 8. Place in the freezer just long enough to de mold easily.
