Luster Dust Techniques
For Chocolates

By Bob Sherman

Luster dusts have long been a staple item with professional cake decorators, however they can be used to make some impressive looking chocolates as well. They are simple to use and fairly inexpensive (a little bit goes a long way).

Many of the items you may need can be ordered directly from this page for your convenience.

PLEASE NOTE!! - Although chocolate making is relatively safe for the entire family to participate, adult supervision is required.

What Are Luster Dusts
Luster and sparkle dusts are a finely powdered inert mineral that provide an irridescent or metallic sheen. They have zero nutritional value (no calories, sodium, fat, vitamins, etc...) and therefore are not considered food products. Basically odorless and tasteless, their use on food products is purely decorative.

Chocolate Making Supplies And Materials

The following chocolate making supplies and other materials were used to make this project. Clicking on the item name will bring you to that item's page with a full description and ordering information.

This is so basic I didn't bother to illustrate it. The dust is simply applied with a soft brush. The key to this is to use a very soft brush such as sable or you will scratch the chocolates. The drawback to this method is that sable brushes are expensive.
